Ingredients
- 2 lb chicken breasts, butterflied or pounded to about 3/4 inch thick
- 2 tbsp olive oil
- 1 tsp each: kosher salt, black pepper, garlic powder, paprika
- Optional insurance: 1/2 cup plain yogurt, to marinate 30 minutes (makes it extra tender)
Instructions
- Rub the chicken all over with oil and spices; let rest 20 minutes (or marinate in yogurt). Arrange on a parchment-lined sheet pan.
- Bake at 400°F (200°C) for 16–20 minutes until the center reaches 165°F (74°C). Rest 5 minutes before slicing.
Storage & reheating 💧
Fridge 3–4 days · freezer 2–3 months. Sliced portions thaw faster. Reheat gently — about 1.5 minutes at medium power; overheating is the only way this goes dry. Also great cold on salads.

Meal-prep tip 💡 A meat thermometer removes all guesswork. Slice before freezing so weekday mornings need zero knife work.
