Ingredients
- 4 salmon fillets (frozen, individually-wrapped fillets work — thaw first)
- 2 heads broccoli, cut into florets, or 1 large bag frozen broccoli
- Olive oil, 3–4 garlic cloves, 1 lemon, salt and black pepper
- Asparagus optional
Instructions
- Arrange salmon in the middle of a parchment-lined sheet pan with broccoli around it. Drizzle with olive oil, scatter garlic, season and top with lemon slices.
- Roast at 400°F (200°C) for 12–15 minutes until the salmon flakes easily with a fork.
Storage & reheating 💧
Best eaten within 2–3 days. Fish is the one meal-prep item we do not recommend long-freezing after cooking (and never re-freeze fillets you bought frozen). Reheat just 1.5 minutes, covered.

Meal-prep tip 💡 Line the pan with parchment paper and cleanup is literally throwing away a sheet of paper.
